Make pizza dough yourself - this is how it works

 

Pizza dough like an Italian

You only need a few ingredients for a good pizza dough: namely flour, yeast, salt and olive oil. The yeast makes the dough rise nicely, the olive oil makes it supple and has a great aroma. When it comes to toppings, the pizza dough is a real all-rounder that you can top with vegetables, meat, fish and, of course, cheese.

Tip: So that the pizza is just as crispy as the Italian one, we recommend a pizza oven, a pizza tray or a pizza stone for the normal oven. Alternatively, for a particularly crispy result, you can preheat your normal baking sheet with the oven and bake the finished pizza dough on the hot sheet.

Make pizza dough yourself - Step 1:

Crumble yeast in 300 ml of lukewarm water, add sugar and dissolve in it while stirring. Let stand for 5 minutes until the yeast water starts to bubble.

Good to know: Dissolving the yeast ensures that it is better distributed in the dough; the sugar drives the fermentation process.

Put the flour in a bowl. Add the yeast water, olive oil and salt and knead briefly with the dough hook of the hand mixer. Then knead with your hands on a work surface strewn with flour for at least 10 minutes until the pizza dough is elastic.

Good to know: Pizza dough is best kneaded by hand. The warmth of the hands activates the yeast and the dough rises particularly well afterwards.

Return the dough to the bowl, cover with a towel and let rise in a warm place for about 45 minutes. The yeast dough should roughly double its volume.

Good to know: Pizza dough takes time to rise and warm. This is the only way for the yeast to develop its full potential.

After rising, knead the pizza dough vigorously again for about 10 minutes. For four small pizzas, quarter the dough and roll it out on a work surface dusted with flour or pull it into shape by hand. For a sheet pizza, roll out whole into a rectangle. Those who prefer particularly thin pizzas can use the dough to make even more round pizzas or even 2 baking trays.

Brush with tomato sauce if you like, cover with your favorite topping and sprinkle with cheese. Then bake in a preheated oven (electric oven: 240 ° C / fan oven: 220 ° C) for 10-15 minutes.

 

Which flour do you use for pizza dough?

Good to know: Ordinary wheat flour (Type 405 or Type 550) can be used to bake pizza without hesitation. The classic, Italian pizza dough succeeds with a special one Pizza flour (Type 00) but best. It contains more adhesive protein (gluten), which makes the pizza dough particularly elastic. For a more rustic dough with a strong taste, you can also use a mixture of Type 405 and Type 1050.

 

Variant 1: Pizza dough with dry yeast

The ingenious thing about dry yeast is undoubtedly that you can always have a bag in stock. So you can really enjoy delicious pizza when you feel like it, and you don't have to stop by the supermarket first. For the pizza dough with dry yeast, simply replace the cube of fresh yeast in the first step of the basic recipe with 2 packets of dry yeast. Otherwise, the preparation remains the same, but we recommend that you knead the dough a little longer.

 

Option 2: Prepare the pizza dough the day before

You can easily knead the pizza dough together the day before by leaving it to rise in the refrigerator for 30 minutes at room temperature and then covered for at least 12 hours. It even becomes particularly fine-pored and you can confidently reduce the amount of yeast by half. Before shaping into pizza, however, the dough should return to room temperature, so take it out of the refrigerator 1 hour before baking.

 

Variant 3: Fast pizza dough

Our variant for the quick pizza dough with quark oil dough tastes almost as good as the original! However, 35 minutes are enough and the quick pizza can be taken out of the oven! Why? Because time-consuming walking is no longer necessary.
