We harvest the healthiest vegetables in the world | The root of light

The light root has almost been forgotten due to the elaborate cultivation method - that's a shame, as it is one of the healthiest vegetables in the world.

This type of yam originally comes from China and was or is used there in traditional Chinese medicine. Studies in recent years have shown anti-inflammatory, immunomodulatory, and antioxidant properties. It also promotes digestion, lowers cholesterol, lowers blood pressure and protects against bacterial infections - in a word, a real turbo for health.

For cultivation we built a narrow raised bed with a height of 1.5 m and filled it with sand. Only the last 30cm were filled with our organic black earth and the tender roots were planted in it at the end of April. In the course of the summer this climbing plant grew up to 6m high in the prepared bamboo frame.

For the harvest, the raised bed must be dismantled and the individual roots must be prepared from the sand. The greatest care is required so that as many roots as possible can be harvested undamaged and thus can be kept in the earth cellar throughout the winter.

The inside of the root is snow-white and extremely slimy. They can be eaten raw or prepared like potatoes in various ways. The mucus disappears completely when it is boiled. In the coming spring we will show you how this root is planted.
